IBM Cloud Kubernetes Services let us bootstrap and learn blockchain quickly.

Routing services, like API gateways, forced you to do everything programmatically through config files. I would have preferred a GUI for minor configuration changes. I think the intended idiom was that you could push configs from versional sources, while still having a bit of GUI for 'things you'd forget'. It's a nice idea, and maybe works well when IBM Cloud Kubernetes Service is your main tool of choice for all things. For a multi-cloud person, it was just an asymmetry that added some frustration.

I used also Kubernetes on-premise installation. It permits you to install a custom Kubernetes cluster in your physical machines. The advantages are clearly the complete access to the machines via ssh and the possibility of customization. In the cons, the costs are really high for maintaining an entire infrastructure by yourself. For our purposes, in the end, we chose IBM Cloud Kubernetes Service, totally managed by IBM.

Please make free tier Kubernetes service the most usable/serviceable across cloud vendors

I only started using it because of the always free tier and you probably should consider enhancing the always free tier of Kubernetes (such as enabling load balancer or increasing worker node specs) to attract customers just to land on IBM cloud as their intention to play/learn about Kubernetes, consequently customers may start using other services on IBM cloud if not.

IKS: Early adopter but needs some polish

I say IKS still has a more to work, while it benefits in being an early adopter like GKE, most of these services are easier to work on when it comes to web management, something the IKS lacks and needs to improve since its release because of how well-established the management flow works on these platforms.

In our case, one of the main reasons for using Kubernetes has been that our main customers require it, so we consider it a great standard.
