Management likes to be able to take backups offline whenever we can. Especially because we live in a natural disaster area and might need to "run" with our data. Having it available offline in the event we dont have internet is what really helps.
We haven't had any bad actors take advantage of us, but we have had to restore accidentally deleted email chains that would have cost us months to recreate. It also helps us create full user backups for offboarded users to free up licenses and drive space.
As stated before in other entries, we have used the PST features to assign former users emails to another user for quick transitions. It also makes for backing up former users emails easy and painless for cold storage.
Its ease of use and ease of data recovery. We are able to store date offline in the event of an emergency. We are able to recover emails in the event of a data catastrophe.
